Coconut Roast Bake

Ingredients:

  • 3 cups flour
  • 1/2 teasp. bicarbonate of soda
  • 1 1/2 teasp. baking powder
  • 1/4 cup sugar
  • 1/2 teasp. salt
  • 1/2 cup coconut cream ( preferably made fresh)
  • 2 tablesps. margarine
  • Extra flour to make a silky smooth dough


Method:

1) Mix dry ingredients
2) Add margarine and coconut milk and mix

3) Add more flour to make a smooth dough

4) Rest for one hour

5) Then knead again, adding a little bit more margarine

6) Rest dough for another 20 mins

7) Grease baking pan, flatten dough and place in pan

8) Prick holes into top of dough with a fork

9) Bake in pre-heated oven (400 degr.F) for 15 mins., reduce heat to 350 degr. F and bake for 15 mins more

10 ) Cut roast bake into wedges, split and butter wedges while hot

Serve with Bouljol

Lenore's Breakfast Bakes

Ingredients
 

  • 1 1/2 cups flour
  • 1 teasp. baking powder
  • 1/2 teasp. salt
  • 2 teasps. sugar
  • 1 tablesp. butter
  • 1/4 cup water
  • oil for deep-frying

Method

1) Mix all above ingredients and form small balls and flatten

2) Heat up oil for deep-frying and fry bakes, a few at a time, until light brown

Serve with e.g. Saltfish Bouljol  or Black pudding

Trinidad Sweet Bread

Ingredients:

  • 1 cup sugar
  • 3 teasp. baking powder
  • 3/4 cup water or milk
  • 1 teasp vanilla essence
  • 1/2 cup mixed peel
  • 1 cup raisins
  • 1 egg
  • 3 cups flour
  • 1/2 cup margarine
  • 1 coconut, grated
  • 1 teasp Angostura bitters
  • 1/2 cup Maraschino cherries
  • 1/2 cup currants

Method:

1) Mix grated coconut with sugar and a little water
2) add egg and mix thoroughly

3) add essence, bitters and margarine

4) Sift dry ingredients together and add to coconut/egg mixture

5) Add remaining water to make a soft dough, do not knead

6) Add fruits and mixed peel

7) Pour in prepared baking pan and bake at 350 degr. F. for 50-60 mins- remove from oven

8) Mix a little sugar and water so make a syrup and baste on bread

9) Return bread to hot oven for 3-4 mins.

Banana Fritters

Ingredients
 

  • 1/2 lb  all purpose flour
  • 2 teasp baking powder
  • 2 cups oil for frying
  • 1/2 teasp Angostura bitters
  • 1 lb bananas, well beaten
  • 1/2 lb sugar

Method

1) Sift all dry ingredients together
2) Add well-beaten bananas

3) Add sugar and bitters and beat again

4) Heat oil in  a heavy pot

5) Drop banana batter into the hot oil by the spoonful and fry until golden brown. Drain on kitchen paper towels

Fritters (Basic Fritter Recipe)

Ingredients:
 

  • 1 cup flour
  • salt to taste
  • 2 tsp. baking powder
  • 2 tbs, sugar
  • 3/4 tsp cinnamon
  • 1 egg
  • 1/2 cup milk
  • 1 tbs melted butter

Method:

1) Sift dry ingredients together.

2) Whip egg.

3) Add milk and melted butter to it.

4) Add liquids to dry ingredients. Beat batter vigorously.

5) Drop by tablespoons into hot fat. Shallow fry until golden brown.
Turn over once. Place on kitchen paper to drain.

6) Sprinkle with granulated sugar .

BANANA FRITTERS - Add 2 cups crushed banana. Sprinkle with 1 tbs. lime juice to prevent discoloration. Beat into Batter.

 FRUIT FRITTERS - Add 1/2 cup crushed cooked pureed fruit to batter ( e.g. pumpkin )
 

 
Coconut Sweet Bread

Makes 2 loaves

Ingredients
 

  • 1   1/2 cup grated coconut
  • 1 cup sugar
  • 1  1/2 oz margarine
  • 1/2 cup dried fruit or candied peel
  • 1/4 teasp salt
  • 2   1/2 cups  flour ( Baker's flour )
  • 1 tablesp yeast

Method

1) Put 1 cup of warm water in a bowl and sprinkle  the yeast in, add 1 tablesp of the sugar and 2 tablesps of the flour- Stir well with a for and leave to rise
2) In another bowl mix grated coconut, sugar, salt and softened margarine

3) Add yeast mixture, flour and dried fruit - mix well

4) Grease a bowl lightly with margarine , place dough in and turn once, then cover bowl with a dish towel and let  dough rise for 1 hour

5) After one hour, knead dough again, then divide into two equal parts and put into two greased baking tins

6) Cover  with towel again and leave to rise until nearly double in size

7) Preheat oven to 350 degr. and bake loaves until light brown ( about 30 mins). Test for done- ness by inserting toothpick in centre of bread- if it comes back out clean, bread is done

8) Remove bread from oven , turn out onto a rack and brush with thick syrup to glaze ( see Sweetbread recipe above)- Cool.

Pumpkin Bread

Ingredients
 

  • 3 cups whole wheat flour
  • 1/2 cup chopped nuts
  • 4 eggs, beaten
  • 2 cups cooked, mashed pumpkin
  • 1   1/4 cups melted shortening or soybean oil
  • 1 teasp baking soda
  • 1 teasp salt
  • 3 teasps cinnamon
  • 2 cups sugar

Method

1) Preheat oven to 350 degr.
2) Grease 2 loaf pans

3) Mix dry ingredients into a large bowl

4)Add nuts and stir well

5) make a well in the centre and add eggs, mashed pumpkin and shortening, stir until moistened

6) Pour into loaf pans and bake 45-50 mins or until done

Floats

Ingredients:
 

  • 1/2 pk  yeast
  • 3/4 cup lukewarm water
  • 1 teasp sugar
  • 1 tsp. salt
  • 3 tbs. butter, melted
  • 3 1/2 cups flour

Method:

1) Soak yeast in 1/4 cup of water. Set aside for 5 minutes.

2) Mix remainder of the water, sugar, salt and melted shortening.

3) Add soaked yeast and sifted flour. Beat well and mix to a soft, dough.

4) Put out on floured board and knead lightly adding more flour if necessary.

5) Put into a greased bowl. Brush top with melted butter. Cover and set aside in a warm place until double in bulk.

6) Shape into small balls and leave to rise again.

7) Roll out into thin rounds and fry in hot oil or until brown. Drain and serve hot with  e.g. fried shark or ham etc.

Allspice Pumpkin Bread

Ingredients:

 1 cup firmly packed brown sugar
1 /2 cup granulated sugar

1 cup cooked butternut squash or canned pumpkin

1/2 cup vegetable oil

2 eggs

2 cups sifted flour

1 teaspoon baking soda

1/2 teaspoon salt

2 teaspoons ground allspice

1/4 teaspoon ground ginger

1 cup raisins

1/2 cup chopped unsalted cashews or walnuts

1/4 cup water


Method:

1) In a large bowl combine the sugars, squash, oil, and eggs.

2) Beat until well blended. In another large bowl combine the flour, baking soda, salt, allspice, and ginger;

3) Add to the squash mixture and stir to combine.

4) Stir in the raisins, nuts, and the water until well blended.

5) Pour the batter into a well-greased 9-by 5- by 3 inch loaf pan.

6) Bake in a 350 degree F oven until a cake tester comes out clean (about 70 minutes).

7) Turn the loaf out onto a wire rack to cool before serving.

Marsha's Coconut bake

Ingredients:

2 cups Flour
3/4 teaspoon salt

2 teaspoons baking powder

1 oz margarine

3/4 cup grated coconut

2 tablespoons sugar

2/3 cup water


Method

1) Sift flour, salt and baking powder into a bowl.

2) Rub in the fat, then stir in sugar and grated coconut.

3) Add water, and mix into a firm dough.

4) Turn out onto floured board, knead lightly, shape into a ball and leave covered for 15-20 minutes. 

5) Press into the centre and using a rolling pin, roll into a circular
shape about 3/4" thick.

6) Heat oven to 350 degrees.

7) Decorate the dough with fork or knife marks.

8) Put onto a flat, greased baking sheet and bake till brown for about 20-30 minutes.

9) Remove from oven.

10) Cut into desired shape 2-3 inches wide.

Serve hot, attractively arranged on a flat dish.
 

Note:
Baking may be done on a baking iron over a surface burner of the stove,

but the bakes must be turned over to get brown on

both sides.

Marsha's Fried bake
 

Ingredients:

2 cups all purpose flour
1/2 teaspoon salt

1 teaspoon baking powder

1 tablespoon plus 2 teaspoons butter or margarine, softened

1/4 cup cold water

vegetable oil for frying

 
 

 

Method

Sift flour, salt and baking powder together into a large bowl.

Rub butter into mixture until mixture is grainy. Stir in water, little by little, until dough can be formed into a ball but is not sticky.

Place dough on a clean, flat surface that has been dusted with flour.

Dust a rolling pin with flour and roll out dough to about 1/4 inch
thickness. Dip the rim of a glass in flour and cut dough into circles.

Repeat with remaining dough until all dough has been used up.

Pour 1/4 inch oil into medium frying pan and heat over medium-high heat for 4 to 5 mins.

Fry them a few at a time for 3-4 minutes per side or until golden brown.
Remove with slotted spoon and drain on paper towel.

Marsha's Hops bread

Ingredients:

2 1/2 cups warm water
2 teaspoons sugar

1 tablespoons active dry yeast

8 cups flour, or more as needed

2 teaspoons salt

 

 

Method

Place the water in a large bowl, add the sugar, and stir until
dissolved.

Add the yeast, stir until dissolved and let stand for ten minutes.

Stir in the flour and salt and mix well. Turn the dough out onto a
floured board and knead for 8 to 10 mins., adding more flour if

necessary to make a stiff dough.

Transfer to a greased bowl, cover with a cloth and allow to rise for 25 mins.

Punch the dough down, form into 12 balls and place on greased baking sheets.

Cover with a damp cloth and let rise until doubled in size
(1-2 hours).

Bake in a 400 degree F oven for 20 minutes. Serve warm.
