Ilka's Shrimp Salad
Ingredients

1 lb cleaned shrimp
Mayonnaise

salt- 1/4 teasp

pepper 1/4 teasp

sugar 1/4 teasp

1 teasp tomato ketchup

1 teasp mustard

1/2 teasp curry powder

a few drops lemon or lime juice

1 cap Trinidad rum

canned mandarine segments or pineapple pieces or mixed  fruit, drained

( fresh or canned)

2 tablesps drained, canned mushrooms, sliced

lettuce- cleaned- to line  individual serving container ( e.g.cocktail glass)
wedge of lemon or lime

 

 

Method

1) Bring salted water to a rolling boil and dump all cleaned shrimp in at once. When the water comes back to the boil the shrimps are cooked. Drain shrimp.

2) Mix mayonnaise with all seasonings incl. rum

3) Add mushrooms, mandarine slices ( or other fruit)

4) Line servin dish with cleaned lettuce and put shrimp salad in

5) Garnish  with a wedge of lemon or lime  , stuck to the rim of the glass
 
 

NB  You can use cooked boneless chicken breast or lobster instead of shrimp

Tossed Mixed Salad

Ingredients

Lettuce, cleaned and ripped into bite sized pieces
tomatoes, cut into slices or wedges

Cucumbers, peeled, seeded and sliced

Sweet pepper - washed, seeded and sliced into thin strips

Onion- peeled and sliced into very thin rings ( or cut up small )

stuffed olives, sliced  thinly

fresh pineapple pieces

some capers

 ( and any other ingredients  you feel to add, like black olives, canned and drained  pickled artichoke, anchovies, a little grated cheese or  channa peas from a can, drained-  etc)

For dressing:

Extra virgin olive oil
salt- a little

pepper- a little

sugar- a little

Balsamic vinegar ( Other vinegars also work, but this one is absolutely delicious !)


 

Method:
 

Mix the dressing ingredients ingredients and pour over salad.
You can serve this as a small side dish salad or as a large salad instead of a full meal ( then serve with French bread or any other kind of special  bread )
